ALRIGHT, SO HERE’S THE SCOOP ON WHAT YOU NEED FOR THIS FLAVOR EXTRAVAGANZA:
1 ¼ pounds Thighs (or boneless skinless chicken breasts, thinly sliced then cut into bite-sized pieces)
4 tablespoons Low Sodium Soy Sauce (plus additional to taste, divided)
3 cloves Garlic (minced)
1 small bunch Green Onions (thinly sliced, about 1 cup, divided)
2 tablespoons Hoisin Sauce
1 tablespoon Fresh Ginger (minced)
2 tablespoons Canola Oil (or grapeseed oil, divided)
6 ounces Whole Wheat Spaghetti (or dry long noodles, such as soba, udon, noodles, or whole wheat linguine noodles)
6 cups Vegetables (thinly sliced)
2 teaspoons Hot Sauce (sriracha or other, or to taste)
INSTRUCTIONS
1. Toss the chicken and part of the soy sauce together. This helps tenderize and flavor the chicken, even in a short amount of time.
2. Stir fry sauce in a measuring cup
3. Stir the stir fry sauce ingredients together.
4. Cook the noodles until nearly al dente.
5. Cooked diced chicken pieces in a skillet.Cook the chicken ( in a skillet over medium-high heat.)
6. Vegetables in a cast iron skillet. Sauté the vegetables.
7. Chicken noodle stir fry in a skillet
8. Pour in half of the stir fry sauce.
9. .Add the noodles, stirring to coat them in the sauce.
10. Add the eggs, sriracha, chicken, and remaining sauce.
11. Cook and stir for a couple more minutes, until the eggs are cooked.
12. Top with green onions.
